Crock Pot Moroccan Stew
A delicious Vegetarian Stew, which takes minutes to prepare and start in the Slow Cooker
- 1 medium onion
- 4-5 cloves Garlic
- 4 stalks Celery
- 4 carrots
- 3-4 green/yellow squash
- 2 sweet potatoes
- 10 crimini mushrooms
- 1/2 bell pepper (any color)
- 1 large tomato
- 1/4 cup red or white wine
- 1/4 cup eggplant carbonate
- Organic vegetable broth
- 1 can chickpeas
- 2 Tbsp cumin
- 1 Tbsp curry powder
- 1 teaspoon cinnamon
In a sauce pan, brown finely diced celery, onion and garlic. Add bell pepper and sauté until softened. Pour in crock-pot. Add squash, quartered mushrooms wine, eggplant carbonate, tomato and chickpeas and place on low. Add spices and ¼ cup of vegetable broth. Add cut up sweet potato and carrots and simmer on low for 6-8 hours.
Serve over rice or quinoa |
